This photo of Gary Young remains a favourite of mine even though it was taken over a decade ago. It illustrates Gary’s dedication to completing the job without rushing. Everyone was in bed asleep, and Gary stayed to capture the final drops of precious essential oil being distilled, knowing that proper distillation requires the perfect temperature and time for all the health-giving molecules to be released. By the way, Gary was the first one up in the morning to cook his famous breakfast the next morning!
